Banana Wafer Pudding: Add 4 delicious grams of protein with this treat
Banana Wafer Pudding
Makes: 16 ¾-cup servings
1 (12-oz) box vanilla wafers, crushed
1/3 cup chopped pecans
1/3 cup butter or margarine, melted
3 bananas, sliced
3 cups cold fat-free milk
1 (2.1-oz) package vanilla or chocolate instant pudding
½ cup Ensure Original Vanilla Powder
1 cup whipped topping
Preheat oven to 325°F. Mix wafer crumbs, pecans, and butter and press firmly onto the bottom of a 13- x 9-inch baking dish. Bake 15 minutes or until lightly golden brown. Let cool 10 minutes. Top crumb crust with banana slices.
In a large bowl, combine milk, pudding mix, and Ensure Powder. Beat with a wire whisk until well-blended. Spoon half of the pudding mixture over the banana layer. Stir whipped topping into remaining pudding mixture and pour on top. Refrigerate for 3 hours. Serve garnished with wafers, banana slices, and a dollop of whipped topping.
