● 1 Vanilla Ensure COMPLETE shake, 10 fl oz
● 1 cup sweet onion, finely minced
● ¾ cup russet potatoes, small diced
● 1 tsp garlic salt
● 1 cup creamed corn, canned
● 2 tbsp chives, minced
In a medium sauce pot lightly sauté onion, potatoes, and garlic powder, cook until tender and translucent. Add the creamed corn and Vanilla Ensure. Cook over medium heat for 15 to 20 minutes or until potatoes are tender. Do not boil! Season to taste with salt and pepper, stir in the chives and serve. Immediately refrigerate or freeze remaining servings and consume or discard after 24 hours.
