Ensure® Complete Apple Streusel Quick Bread
When it’s time for dessert, it’s time to break out this always-pleasing recipe made with Ensure® COMPLETE Vanilla shake!

Ingredients
● 1 Vanilla Ensure COMPLETE shake, 10 fl oz
● 1 box cinnamon streusel muffin and quick bread mix
● 1 large egg
● ¼ cup vegetable oil
● 1 large apple, chopped
● ½ cup confectioners’ sugar
Directions
Heat oven to 425° F (400° F for dark nonstick pan).
Place paper baking cups in 12 regular-size muffin cups or grease bottom and sides of 3 small loaf pans with cooking spray or oil.
Stir muffin mix, egg, oil, and 1 cup Ensure COMPLETE in a medium bowl until blended. Fold in approximately 2/3 of the chopped apple. Divide batter equally among muffin cups or loaf pans.
Combine streusel mix with remaining chopped apples. Sprinkle streusel and apple mix evenly among muffins or loaves.
Bake 15 to 20 minutes for muffins, 25 to 30 minutes for small loaf pans. Remove from oven once golden brown and tops spring back when touched. Cool 5 minutes.
While muffins cool, make icing. Combine remaining 2 oz of Ensure with confectioners’ sugar. Whisk until smooth. Drizzle icing over muffins and then carefully remove from pan(s). Cool completely before storing. Remaining servings should be stored at room temperature or refrigerated for consumption within 24 hours.
