● 2 Vanilla Ensure COMPLETE shakes, 20 fl oz
● ½ cup arborio rice (or short-grain white rice), uncooked
● ½ cup golden raisins (optional)
● 1 tsp ground cinnamon
Using a fine mesh colander, rinse rice under cold water. Transfer rice to a small saucepan along with other ingredients.
Warm saucepan over low-medium heat, stirring frequently to prevent ingredients from sticking to the bottom of the pan and to prevent a skin from forming on the top. Do not boil.
Reduce heat to low for 20 to 30 minutes or until the pudding reaches a consistency slightly more liquid than you would like. Remove from heat and let cool for 20 to 30 minutes allowing time for any remaining liquid to absorb. Serve while still warm. If not enjoying immediately, transfer to a storage dish and refrigerate until ready to serve, reheating before serving.
